I love biscuits with sausage gravy, but it has been six long years since I've had it. Sometimes I miss meat. In Sweden, cheesecake is savoury, and made with herring and mild cheese.
Of course, I have one aim, the grotesque. If I am not grotesque I am nothing.
i'm looking for something cajun, all i found on web is extremely exotic with ingredients i don't know, weird sausages etc...i'd like to make a soup or a peas and rice based meal with cajun accent, any idea with european ingredients? i bought an organic "cajun mix" spices at my diet store but it tastes like spicy that's all, my friend who lived in america told me it's anything but cajun...
I like the Cajun-style asian food stalls that you find at malls here. It's crappy mall food but yummy it's good. I don't think I've ever had real Cajun food.
some difference between cajun and creole food, worth taking the time to figure them out. but at the bottom of both is "rue" or better yet roux:
"Here is a BASIC recipe for roux, you can adjust it as desired, as in flavorings, juices from meats, veggies and so on.
4 tablespoons of pan drippings and/or butter 6 tablespoons flour
Heat fat or over medium high heat. Add flour all at once whisking vigorously. When mixture thins and starts to bubble, reduce heat to low and cut back on the whisking. Cook until you smell a toasty aroma then cook 2 minutes more, stirring occasionally.
Roux can be used immediately to thicken a liquid that is at or below room temperature. To thicken a hot liquid, allow roux to cool to room temperature, or refrigerate.
Tightly wrapped, roux can be refrigerated for up to a month. Simply break off pieces and use as needed."

<<Alligator meat is a delicacy here in Louisiana. Years ago, alligator was plentiful but demand for alligator hide nearly drove them into extinction. Nutria (a relative of the beaver seen in the photo on the right) lacking their natural enemy, have grown in numbers and eat so much vegetation that coastal erosion has become a problem. Cajuns, always frugal with what nature provides, found that alligator meat was tasty --- especially the tail for grilling. Conservation and even alligator farming has brought this tasty meat back to our tables. A sauce piquante (pronounced sos pee-kont) is a highly seasoned stew. Piquante means "to prick" and that's what the spices and flavors in this do.
Ingredient List
4 pounds alligator meat
1 tablespoon paprika
2 sticks of butter
1/4 cup chopped parsley
3 medium onions, chopped
1 1/2 bunches onion tops
1 green bell pepper
2 cups water
4 cloves garlic, minced
cayenne pepper
4 tablespoons, finely sifted white flour
salt and black pepper
3 cans of cooked whole tomatoes (Rotel tomatoes)
1 8 ounce can of tomato sauce
4 bay leaves
1 pound andouille (fat, smoked sausage)
4 tablespoons vegetable oil
Boil alligator meat for 5 minutes to remove fat. Rinse meat in clean water. Brown meat in black iron pot. Remove meat and clean pot. Place flour and oil in black pot. Cook stirring constantly until as dark as chocolate. Add onions and bell pepper. Cook until dark brown and soft. Add tomato paste and cooked tomatoes and simmer for 30 minutes. Add garlic, meat, seasonings, and andouille and simmer 25 minutes. Add butter and cook for another 40 minutes. Serve over rice.
Any meat can be substituted in a sauce piquante.>>

1 pound dry kidney beans 1/4 cup olive oil 1 large onion, chopped 1 green bell pepper, chopped 2 tablespoons minced garlic 2 stalks celery, chopped 6 cups water 2 bay leaves 1/2 teaspoon cayenne pepper 1 teaspoon dried thyme 1/4 teaspoon dried sage 1 tablespoon dried parsley 1 teaspoon Cajun seasoning 1 pound andouille sausage, sliced 4 cups water 2 cups long grain white rice
Directions
Rinse beans, and then soak in a large pot of water overnight. In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes. Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours. Stir sausage into beans, and continue to simmer for 30 minutes. Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.>>

okkkkk roux is béchamelle in france which the base is the...roux, can't really figure it was actually roux of béchamelle. yesterdeay i make something like the second recipe, whithout andouillette but with fresh gambas rosted with onions, fresh garlic and flambées with rhum, then i add the spices, i add the dry rice, add a spoon of vegetable bouillon, water, and then it tasted approx like indonesian food which can be considered as southern food i don't think i'm able to find alligator's meat, don't think i can avoid jail if i cook alligator's food...

nah milki what u hear in True blood isn't real cajun, some do have a southern mississippi sound to them, and my accent is still tinged with southern as well but tempered by living in the north for so long. Here try this cooking video to hear cajun accent....
